Hi Ian, I think this may work if you're able to catch the starter when it is still domed. Try putting it in the refrigerator right after feeding it, and this should help prolong the fermentation time in the refrigerator. I still think you'll get better results with more feedings, but let me know how your experimentation goes! Barb
