Hi there, Diane! You can use an equal amount of instant yeast in place of the active dry the recipe is calling for — in one packet of yeast, there are 2 1/4 teaspoons of yeast. You won't need to bloom the yeast in warm water first, but you'll want to be sure to include that water with the other liquid in your dough so that it's properly hydrated. Happy baking! Morgan@KAF
