I bought a packet of dry yeast from the corner store whose expiry date was few months ahead. Still it did not froth when I put it in luke warm water with a tsp of sugar. Now I want to get some from the on-line store. I want to know whether I can culture yeast at home and keep it in fridge for future use instead of getting always from the stores? Even if it can be stored for a month it is fine. Do the quantity of sugar affect the growth of yeast? When more alcohol is formed will it stop the reaction? By the way, I am an eighty year old grandpa doing this just for the heck of it. Being a science graduate, I have a curious mind. That is all what I have to do these things. If you can send an email, it will be good as I may miss this page later. Thanks a lot. Warm regards, Guptan PS. I am from a Hindu family and we did not do much of baking in olden days. Now only we have started to experiment.
