Hi Karine, you're welcome to try using this approach with your puff pastry cheese sticks to see if it improves the texture. You'll probably also want to bake the puff for a bit longer to help dry it out more thoroughly. Puff can be baked to a deep caramel color, which will help the layers stay flaky.
