Vince, removing the bread from the pan keeps moisture from forming on its bottom and along the sides. This moisture can produce a leathery/tough crust. I've never used the keep warm cycle for bread (I use it for casseroles, soup, desserts, etc., just not bread) — so not sure if that cycle would help evaporate nay excess moisture from the pan, or not...? PJH
