Hi Jennifer, All ovens are going to be a bit different, so you'll have to try it a couple different ways to see what works best for your oven. Try just cracking the door open for 5 minutes, and watch the bread carefully the first couple of times you try this method. Soon you'll get a good feel for how it's going to work best for you. ~ MJ
