One way around this deflation would be to mix a double batch of the base. Divide the base in two bowls. Whip one half of the egg whites and fold into one batch of the base. When you're almost done with making those waffles, whip the second half of the egg whites and fold into the second bowl. A bit more work, yes, but well worth the trouble! Happy baking- Laurie@KAF
