I start my recipe with one or two ladles of my Levain starter depending on which waffle iron I use. I brush the waffle irons with lard as it doesn't burn onto the irons. I freeze waffles between layers of wax paper in gallon zip lock bags for use as toaster waffles, they are so much better than bought waffles. I have a 1950's Kenmore square electric iron with removable waffle irons that turn it into a double griddle. My other is an antique Griswold round stove top from 1901.
