Strange that Kye from KAF responds that biscuits should be cut with a twisting motion, rather than straight down, when the author of the blog post, Posie Harwood, says in the post just above this one that she corrected her post because pressing gently straight down is the CORRECT cutting method for cutting biscuits, rather than twisting! It seems that there is some discrepancy in what method is best, even among KAF employees!
As for me, I will continue to press gently straight down because I get a very high rising biscuit with that method. In addition, since using a bench knife is a recommended KAF method for cutting square biscuits, and works great, there is obviously no way to cut by that method without pressing gently straight down! Seems that quite a few of us have been confused by the conflicting information on the best method for cutting biscuits. This may end up being one of those "to each his own" dilemmas!
