Hi Lynette! Thanks for your comment -- I've adjusted the post because you are correct, you should press gently down and not twist. (As I told the other readers, clearly I had biscuit-fogged brain when I wrote that!). Love that you've been baking biscuits for so long, it's clearly in your blood! Cheers, Posie
