I adore biscuits and love to make them for others. I bought some square (maybe from you!) biscuit cutters that I love best because they make it so easy to minimize having to reroll the dough to cut more due to the circle cuts leaving so much excess dough behind. I recently read in a biscuit cookbook that you are better off hand-patting the dough vs. rolling because the rolling can be so much harder on the dough than gentle shaping with your hands. I wonder if you have found that to be true. I tend to like "cats'head" biscuits as I tend to call drop biscuits because they are so much faster and less messy to make but a good shaped and layered biscuit is something to treasure and enjoy!
