Posie, I really enjoyed your blog for your wonderful writing style as much as the baking tips. I have two questions related to getting a good rise: You suggested using a gentle twisting motion to cut the biscuits but I've heard that action crimps the sides a bit and keeps the biscuit from rising as well as a straight-down cut. Damaris Phillips ("Southern at Heart") also suggests flipping the cut biscuit over before baking. What are your thoughts? Thank you.
