How interesting that you say to twist gently instead of cutting straight up and down! I have read a dozen times that you SHOULD cut straight down to avoid sealing the edges. Like if you twist the cutter it's similar to sealing an envelope or a ziplock bag. Can you explain? I just love technique classes like this!
