You can microwave bananas in their skins for 1-2 minutes to ripen them more. My recipe only has 1/4 cup of oil and 1 egg for liquid beyond the mashed bananas, and I probably wouldn't reduce that. I also blend the sugar, oil, and egg together in my mini food processor along with the bananas, which in itself really creates a smooth liquid to blend with the dry ingredients.
