SERVINGS: 2 LOAVESPREP TIME: 10 MINUTESCOOK TIME: 45 MINUTESTOTAL TIME: ABOUT 1 HOUR INGREDIENTS: 3 Very Ripe Bananas, peeled and sliced 1 cup Brown Sugar ½ cup White Sugar 1 tsp Baking Soda ¼ tsp Salt 4 Eggs 1¾ cups Flour ½ cup Vegetable Oil 1 cup Plain or Vanilla Yogurt Optional 1/4 Cup Finely Chopped Nuts of Choice DIRECTIONS: -preheat oven to 325F -spray or oil two loaf pans -in a mixer bowl add bananas, sugars, baking soda and salt and mix on high speed for 1 minute -add the eggs and flour and blend by hand -add oil and yogurt and continue to mix by hand until well combined -mix in the nuts if using -divide batter between the two loaf pans -bake for 45 minutes or until toothpick inserted in centre of loaf comes out clean -allow to cool in pan on a wire rack for 15 minutes, then turn out onto plate and allow to cool for another 15 minutes before slicing Read more: http://bread.betterrecipes.com/chateau-frontenacs-royal-banana-bread.html#ixzz3gNKvzItb
