When I have overripe bananas, I give them to my pet chickens. They go bananas over bananas! They even post a chicken guard to alert them when the "banana lady" is around and they all come running when she calls. Actually, I like adding lemon rind and juice and chopped fresh mango with toasted pecans or walnuts to my banana bread. I also use a grid potato masher to make small chunks of banana. I have also found that chunks of banana create a more intense banana taste in my banana pancakes than mashed banana.
