I add a half teaspoon of cinnamon and a quarter teaspoon of nutmeg, and my cup of inclusions is a half cup of chopped raisins and a half cup of chopped nuts (usually pecans, walnuts, or almonds). My extract is usually vanilla or almond extract. I have not tried either the jam or the topping yet, but I think the orange marmalade sounds delicious, and I want to try a brown sugar streusel.
