Oooh, brown sugar coconut topping?! Sounds like heaven!
For the bread in the beauty shots at the top and bottom of the post I started with the Banana Bread recipe and added:
1/2 cup caramel ice cream topping
1 cup semi sweet chocolate chips
Coconut streusel: 1/4 cup butter, 1/4 cup sugar, 2 tablespoons flour and 2 tablespoons coconut milk powder.
