I make a Jamaican banana bread that is flavored with spiced rum, raisins, pecans and then topped with a crunchy brown sugar coconut topping. No added spices. But the method is almost like making a biscuit; cut the butter into the flour and then add the buttermilk. This produces a lighter crumb. This isn't a plain ole banana bread but very tropical and tasty. MJ, love your ideas too! Can you put together the recipe for the last picture with the caramel and chocolate chips? I sure would love to try that banana bread.
