Some pizza dough recipes also encourage you to let them rise in the fridge overnight, and claim that it adds flavor. Even if I make a sauce, flavored mayo or vinaigrette, when I let them sit for 20 min. to a half hour, the flavors have time to collaborate, change and intensify. So the gist of my long story is, let your food relax!!
