Hi, new to your blog. Fascinating information. I am a member of our local Youth Center and each year we have a Christmas Cookie bake sale. We average 50-60 dozen cookie orders plus breads and candies. In trying to prepare dough in advance I made some Snicker Doodles formed and rolled in cinnamon sugar then froze. They said thick and chewy but spread to extreme, looked horrible but tasted good. Would rolling them in sugar before baking be the problem or perhaps the fact I did not let the dough rest before forming and freezing.
