Twice I chilled the cookie dough when making chocolate chip cookies and oatmeal cookies recently. Both time the cookies hardly flattened. I had to press down on the dough before baking. The cookies did not spread like in the pictures of the recipes and they were too dense for my liking. I like cookies that are somewhat light, crispy and chewy inside.
