We have a helpful blog post written about using what we've found to be the best all around egg-replacer: golden flax meal blended with water. Check out our Homemade Egg Replacer post to answer some of your questions. While we haven't tried that is in this recipe for gluten-free biscuits, you are more than welcome to give it a go!
