Three eggs is typically sufficient for a gluten-free recipe, so you might want to give it a try using gluten-free flour and xanthan gum. Another approach you might want to consider using is opting for our Gluten-Free Measure for Measure Flour. If you're not baking with yeast, it's a fantastic option because you don't need to change anything else about your recipe: simply swap in the Measure for Measure Flour and bake! Kye@KAF
