Hi Daniel, it's hard for us to make recommendations without having made your recipe before. However, we can say for sure that you'll need to add xanthan gum. Typically we recommend using about 1/4 teaspoon per cup of gluten-free flour. As far as the eggs go, if you were to add one more egg, you would want to reduce the milk by 1/4 cup. However, since there are already 4 eggs, we think you might want to start by just swapping the flour and the xanthan gum and seeing how it turns out.
