I’ve found the manual for their Virtuoso machine (not Virtuoso plus) online and it has more details about the timing of each course, including the timing of rise 1, punch down, rise 2, punch down and rise 3 timing. The manual I found with this info is called “How to enjoy your home bakery virtuoso bread maker.”
