Hi Gregg, the Zo Virtuoso Plus has a SHAPE cycle, which can be turned off. When the SHAPE cycle is on, the machine will stop and pause for one hour after the kneading cycle is complete. This allows the dough to be removed and shaped before baking. When the dough is returned to the machine, press START to move to the next cycle. If the Start Button is not pressed, it will automatically resume after 1 hour.
