Wow! Loved this article. Cannot believe I waited so long to look this up. I’ve been machine baking bread successfully for more than 40 years! I have always had consistently good success… but had never heard of removing the paddles! Genius! The reason I came came looking was for the cooling advise and I am going to try it right now. The end beeper just sounded on my machine. Sourdough! Yummmm.
