Hello I was a little confused on the above when you say ... "Substituting for wheat flour: We’ve found that using 1 large egg in place of 1/4 cup of the oil, and adding some xanthan gum, works really well. The amount of xanthan will depend on the amount of flour you have, but in general I use about 1/4 teaspoon for every cup of flour"... My question is my recipe calls for ½ cup whole wheat flour and ¾ cup all purpose flour so what would I do to make it Gluten free and comparable? For the 1/2 cup of whole wheat flour am I going to use 1/2 cup gf all purpose flour and my recipe calls for 1/2 cup of coconut oil so instead add an egg, some xantham gum, and instead of 1/2 cup cocunut oil use 1/4 cup?
