Hi Devin, we're so glad to hear you enjoyed this recipe! Maple syrup won't perform quite the same way as corn syrup in a candy recipe like this, so I think you'd be better off trying a caramel recipe that has been written to include maple syrup. You could also consider adding a small amount of this Natural Maple Flavor at the end of the process (along with some or all of the vanilla) to give this recipe a maple boost.
