Hi Beth, I think the best thing for the crust would be to replace with a vegetable shortening (Earth Balance has a nice one that I've used successfully before). For the filling, I think you can use coconut milk, just make sure it' the full-fat, canned variety. I'd also probably go with about 1/4 of a cup less.
