I think your excellent article has given me the solution for my fruit filled cookies that were "unsealing" themselves. I had two versions of the recipe: one using baking soda and one using baking powder. I had recently been using baking soda (I don't remember what I used before; I only make these once a year). I think the soda was the culprit!! So now I have decided your Bakers Companion book is indispensable, but I find it is "No longer available" Aaaargh.....
