Hi Jim, Sorry, we haven't ever tried to make chocolate bars or pieces out of any of our cocoas, so we don't have any first hand experiences with that to share. What we can say is that there are excellent high quality chocolates out there that fit the bill, and that a good dark chocolate is worth every penny when you consider the work, time and ingredients that have gone into it.
