Well, I'm impressed as all get-out! I've been baking for over 60 years, am a former pastry chef and baking instructor. Wish I had all this info when I was in the classroom! I have used different cocoas before and totally love black cocoa. Gives your pumpernickle bread that gorgeous deep, dark color. Maybe King Arthur folks could create a sampler for customers, so they can experiment with the different cocoas without buying all of them. It would be a super way to introduce the complexities of cocoas. Have a blessed evening! :)
