First complete article I have ever read about cocoa and baking! Personally, I like bitter dark being born in Belgium where they have some of the best chocolates in the World..A good chocolate, is a fresh chocolate, not the kind that has been sitting on shelves for several months! The most popular and the healthiest chocolate is the "Pure" or darkest bitter chocolate! Being initially a sacred Mayan wedding drink, it was perfected by the Dutch who added sugar. But there is also a dark side to the cocoa beans and one must make sure that it is "Fair Trade" where they do not use children forced labour.
