We found that we prefer the texture when the bacon is baked in a preheated oven; sometimes it can turn a bit rubbery if it is warmed slowly rather than put into a hot oven, which makes it super crispy. However, to each their own. If you've found that using a cold oven works well for you, then we most certainly encourage you to continue using that approach. Happy baking! Kye@KAF
