I just revisited this post when company arrived for Labor day weekend. I baked both Pork bacon and Lamb bacon on the same sheet pan and they both turned out wonderfully! What's Lamb bacon you say??? It's cut from the Lamb belly, and cured. It doesn't have as much fat as Pork bacon, and the curing process is a little sweeter.
