I NEVER use anything but my air bake pans either. My cookies are always soft on the inside. These pans make it very hard to burn cookies!! Another tip I have learned is that almost all recipes have bake times that are too long. I always cut 1-2 minutes aff the time given. This is true for more than cookies; I've found that to be true for almost all baking.
