Great post and demo pix. I always use parchment and have cookies sheets I love by a company named Doughmakers. They have a pebbly, semi shiny surface. Suellen, we have Doughmakers cookie sheets (and cake pans) in our test kitchen - definitely a nice product! Thanks for sharing - PJH
