What would the difference be in baking with a Silpat vs. parchment? Kara-I wrote back to a previous comment about Sil-Pats: they do not promote browning as well as parchment paper, but you can certainly use them for baking cookies. It’s a hard balance as you don’t want to over-bake the cookies but you want color on the bottom: you may have to tweak the timing OR place the sheet lower in the oven if the heat source is in the bottom. The major difference is that the Silpats act as a better insulator from the heat coming into contact with the pans (and thus the cookies), so they cookie bottoms don't brown very well or very evenly.
