I like using my Silpats, sometimes a silicone sheet. Can't bring myself to use disposable parchment unless it is a messy one time (not sheets of cookies,). Don't see Silpats mentioned much so I wondered if they are just "out of favor"? Greetings Lynn! I couldn't say why we didn't test them, but I do know they tend to create paler products. I love how reusable they are, but for crispy, brown bottoms, Silpats make it a bit difficult. Happy Baking! Kim@KAF
