Another variable in my kitchen is that I tend to re-use a cookie sheet, and I've learned (with burned cookies) that cookies bake much faster when the pan is warm or hot to begin with. From now on, when I'm in a hurry I will use my dark pan and watch the cookies carefully. Two batches on the dark pan can be cooked in almost the same time as one can on the shiny pan. (Usually I lower the temperature for the dark pan.) And parchment is indispensable, a life saver when baking. Thank you for a great post, and for all things KAF.
