May I use coconut oil instead of the vegetable oil without affecting the final crumb? Also I have to tell you that we use only KA flour and we buy it in 50# sacks. We do lots of baking. These muffins sound ideal. Also may I use this recipe on my blog if I link back to you? I will take my own pictures. By the way, I thought PJ was a gentleman. The joke is on me.
