The spice... it is just possible that if it is really SECRET.. could be cardamom? That is the huge secret in Norwegian cake doughnuts. Interesting. Cardamom is the "secret" in a ginger cake I make, too - a little bit goes a long way, and it's very distinctive, though people usually can't guess what it is. My grandmother is Norwegian, and used to fry up cake doughnuts regulrly - I'll have to check her recipe. Thanks - PJH
