Hi Nancy, we have many popover recipes and most of them vary somewhat, ranging from 325°F to 400°F. Any of those temperatures would work for any of the recipes eventually. It's just a matter of timing, the recipe developer, and what they preferred and found worked best for their particular recipe and formula.
