PJ, this looks great! Can I use my small pain de mie bread pan? What is the purpose of brushing the beaten egg on the bread before the filling? No, you should probably cut the recipe by 1/3 to fit in the smaller pain de mie. The beaten egg helps the filling adhere to the dough. Have trying this recipe. Elisabeth
