Thanks for your feedback on this recipe, Kristin! Since sourdough starter can vary quite a bit in consistency (especially if you use discard), this can also contribute to a wetter or stiffer dough. It's fine to use your discretion and add a bit more liquid, as necessary, but keep in mind that the chopped apples will also bring moisture content to this dough.
