Hi there! I’m new to this sourdough world and I have a question about feeding. I refrigerate my starter and after the very first feeding I notice that it doubles in size within 2-4 hours; then unfortunately at hour 12 it has flattened out again. Since I missed the peak timing to use the starter, when I go to feed it again, do I discard all but 4 ounces of starter and then feed? Or do I just feed what is left of my starter without discarding? Looking for help! Thank you!
