I'm also new to sourdough starter. I have been feeding my starter everyday (it is not refrigerated) for a couple weeks now, but it does not seem to rise very much or at all. It does get still get a layer of liquid fermentation on the top and has some small bubbles. Is there anything I should be doing to increase its activity? Or is it fine as it is? I'm excited to bake my first loaf of bread, but I don't want to ruin the starter in the process.
