Hi! I'm at the point where I got a thriving starter, put her in the fridge, forgot to feed her for a week, pulled her out this weekend, fed her yesterday and overnight, she must have tripled because she threw some starter out of the clamped weck jar. She was also very bubbly. She's since calmed down. I need to do the final feeding (not to mention it's been 14 hours since I fed her last night), but I'm not sure if I'm feeding as normal - removing 4oz, adding 4oz water and flour, so I can make the rustic sourdough, or just adding 4oz water and flour without any removal. Please advise. I don't want to mess this up! I'm so close and so excited!
